1. Smoky Paneer Tikka

Are you a paneer lover? If yes, then paneer tikka is the best option for you to choose as starter. Paneer chunks, sliced onions, tomatoes and capsicum marinated with spices are grilled & seasoned with lemon juice and chaat masala. While preparing this yummy Indian Starter focus mainly on the marinate recipe. You can grill it in the tandoor or non-stick grilling pan.   • Large red capsicum  –  1
  • Large green capsicum  –  1
  • Medium size onion  –  1
  • Large yellow capsicum  –  1
  • Sliced paneer  –  250gms

For Marinade

  • Oil  –  1 tbsp
  • Gram Flour ( Besan)  –  1 tbsp
  • Turmeric (Haldi)  –  a pinch
  • Ginger garlic paste or crushed ginger garlic  –  1 tbsp
  • Lemon Juice  –  1 teaspoon
  • White pepper (optional)  –  as per taste
  • Salt  –  as per taste
  • Yogurt or thick curd  –  1/3 bowl
  • Fresh Cream  –  1/2 bowl
  • Fennel (Saunf)Powder   –  1 teaspoon


  • Slice all the vegetables into large pieces.
  • Cut the paneer into cubes.
  • Take a big bowl. Pour cream and curd in it. Whisk it well.
  • Now add all the marinade spices, ginger-garlic paste and lemon juice. Mix it.
  • Dip all the sliced vegetables & paneer cubes in the mixture.
  • Keep the marinated paneer and veggies in the refrigerator for at least an hour.
  • After 1 hr, take them out in the room temperature.
  • Brush them up with some oil because while grilling paneer become dry. So brushing them with oil keeps them soft.
  • It’s the time to grill. Skew the paneer and veggies alternatively in a toothpick or skewer.
  • Grill it in the oven at temperature 220-degree centigrade.
  • It can also be grilled in the nonstick grilling pan.
  • Now take them out and arrange them on the plate.
  • Take a coal and place it on fire. Burn the coal for 5-10 min.
  • Now place that coal in a bowl & keep that bowl in the middle of the paneer plate.
  • Pour some ghee or butter on the sizzling coal & cover the plate with a lid for 5 min.
  • Smokey effect will make you fall in love with this yummy Indian starter.

2. Tomato Bruschetta with Cheese

A beautiful & healthy Indian starter to serve your appetite. Italian bread topped with ripe thickly cut tomatoes, basil leaves with the flavor of cheese & garlic.   • Italian bread  –  1
  • Garlic cloves  –  4-5
  • Olive oil  –  1 tbsp

For Toppings

  • Fresh Red Tomatoes  –  3-4
  • Black pepper  –  as per taste
  • Fresh Basil Leaves  –  6-7 sliced finely
  • Vinegar  –  2 tbsp
  • Salt  –  as per taste
  • Cheese  –  1/2 bowl


  • Halve the tomatoes & take out the majority of the seeds. Now chop them finely and put them in a bowl.
  • Add salt, black pepper, basil leaves, olive oil and vinegar in it.
  • Keep the bowl aside.
  • Cut the Italian Bread into thick slices.
  • Now take a grilling pan and pour some oil on it.
  • Grill the bread from both the sides.
  • Rub the garlic cloves on the bread while grilling from the bottom.
  • Spread cheese on the bread.
  • Take them out in the plate.
  • Top the bread with the sliced tomatoes.

I remember, when I was a kid, mumma used to wrap the vegetables and pickle in the chapati and roll them and we used to love eating it while running for school in the morning.   • Green capsicum  –  1/2 bowl
  • Tomatoes chopped  –  1/2 bowl
  • Turmeric powder  –  1 teaspoon
  • Ginger-garlic paste  –  2tbsp
  • Tomato puree  –  2tbsp
  • Paneer (cottage cheese)  –  1 cup
  • Salt as per taste
  • Red chili powder  –  1/2 teaspoon
  • Garam masala powder  –  1/4 teaspoon
  • Coriander and mint chutney  –  2 tbsp
  • Thick Yogurt  –  1/4 cup
  • Oil  –  2 tbsp
  • Chopped onion  –  1/2 bowl
  • Whole wheat chapattis  –  4

To garnish

  • Onion rings  –  4-5
  • Mint or coriander leaves  –  4-5
  • Chaat Masala to sprinkle


  • Take a pan and pour some oil in it.
  • Now add chopped onions and saute it well.
  • Add ginger garlic paste, capsicum and paneer. Cook for 1 min.
  • Now add chopped tomatoes, green chilies, salt, turmeric powder, red chili powder and saute it for 1 min.
  • Add tomato puree and cook on high flame. Turn off the flame when done.
  • Now take a chapati. Mix coriander chutney and thick curd in a bowl.
  • Spread the yogurt chutney on the chapati and place a tbsp of cooked vegetable mixture.
  • Now roll the chapati tightly and bind it with a toothpick.
  • Garnish it with onion rings, mint leaves and sprinkle some chaat masala on it.

For cheese balls

  • Finely chopped carrots  –  1 tbsp
  • Finely chopped green capsicum  –  1 tbsp
  • Finely chopped green chili  –  2 tsp
  • Chopped ginger  –  1 tsp
  • Finely chopped corn  –  1 tbsp
  • Boiled potato  –  ½ cup
  • Finely chopped coriander  –  1 tbsp
  • Finely chopped french beans  –  ½ cup
  • Finely chopped cabbage  –  ½ cup
  • Breadcrumbs  –  2 tbsp
  • Grated cheddar or mozerilla cheese  –  1 cup
  • All purpose flour  –  1/4 cup
  • Salt as per taste
  • Black pepper as per taste
  • Refined flour and water batter as required
  • Oil to fry

For tomato basil sauce

  • Tomatoes seeded and diced  –  8
  • Garlic cloves, minced  –  3-4
  • Olive oil  –  1/2 cup 
  • Chopped fresh basil  –  1/4 cup 
  • Large onion, minced  –  1/4 cup
  • salt and pepper to taste


  • Take a bowl. Add all the chopped vegetables & boiled potatoes too and mix well.
  • Don’t forget to add coriander leaves.
  • Add all purpose flour to the mixture so that all the vegetable balls can bind well.
  • Mix salt and black pepper.
  • Take a portion of the mixture and stuff the grated cheese in the middle of it and then make the ball.
  • Repeat the same with the whole mixture.
  • Now dip the balls in the refined flour and water batter and put it into the bread crumbs.
  • Wrap the balls with the bread crumbs.
  • Keep it in the fridge for 5-10 min.

For tomato basil sauce

  • Take a frying pan and pour some oil in it.
  • Now add minced garlic cloves and onions.
  • Saute them till they become translucent.
  • Now add large sliced tomatoes, oregano, salt and black pepper in the pan and saute them for 2 min.
  • Put the mixture in the grinder and grind them well.
  • Take it out in the bowl or pour it on the cheese balls.
  • Garnish it with basil leaves and serve it.

5. Rava Dhokla

Rava dhokla recipe is an instant & healthy recipe among Indian starters recipes. This is a famous Gujarati snack made up by sooji (rava) soaked in buttermilk (yogurt and water) and tempered with salt, red pepper, green chilies and lemon.   • Rava ( Sooji)  –  2 cup
  • Sour yogurt  –  300 gms
  • Salt  –  as per taste
  • Red pepper  –  1/2 spoon
  • Meetha neem leaves  –  7-8
  • Brown mustard seeds  –  1 spoon
  • Lemon Juice   –  1tbsp
  • Green Chilies  –  1
  • Meetha soda  –  1 spoon


  • Take a bowl, pour yogurt, and some water and grind it to make buttermilk (Chaach).
  • Now add sooji and mix it well. Make sure it should not be too thick or loose.
  • Now add salt in the sooji batter.
  • Mix it well and keep it for 10-15 min.
  • After 10-15 min. Add 1 pouch eno or 1 spoon meetha soda in it & mix it.
  • Now keep the dhokla pan on the gas and turn on the flame.
  • Add 1-1.5 glass water in the steamer.
  • Now grease the dhokla plate with the oil and pour the batter into the plate.
  • adjust the plate in the steamer and steam & cover the lid.
  • Cook it for 10-15 min.
  • Check the doneness with the knife. If the knife comes out clean, then it’s done.
  • Take it down from the steamer & let it cool for 5 min.
  • Till then prepare the tempering.
  • Take a pan and pour some oil in it.
  • Add meetha neem leaves & rai (brown mustard seeds) and sliced green chilies.
  • Stir it for a minute.
  • Season the dhoklas with the tempering mixture.
  • Take a bowl and add half spoon salt and half spoon red pepper.
  • Sprinkle it on the dhoklas.
  • Finally, sprinkle the lemon juice over the dhoklas to make them more tempting.
  • Mouth watering rava dhoklas are the best snacks & appetizers.
