In this yummy brain food breakfast recipe, paneer plays an crucial role for body building as it is the rich source of calcium, phosphorus, vitamins, minerals and proteins. Ingredients

  • Thin Cucumber –  2 Pcs

For Stuffing

  • Mashed Paneer  –  1/2 bowl
  • Thick curd  –  2 Tbsp
  • Chopped Red Capsicum  –  1/4 bowl
  • Chopped Green Capsicum  –  1/4 bowl
  • Sliced Olives  –  1/4 bowl
  • Preserved jalapeño pepper, finely chopped  –  1 spoon
  • Dill weed (Soa Patti)  –  1/2 spoon
  • Fresh Orange or Lemon Juice  –  1 spoon
  • Salt as per taste
  • Black Pepper as per taste

Method

  • Wash the cucumber & peel it off.
  • Slice the cucumber into thin long strips.
  • Now take a bowl and mix all the stuffing ingredients.
  • Take a long strip of cucumber & diffuse the stuffing mixture on it.
  • Now it’s the time to make rolls.
  • Fold the strips gently& make a roll of it. Toothpick it.
  • Make many more rolls & garnish it.

2. Almond (Badam) Paneer Cutlet

This healthy brain food breakfast recipe contains rich raisins, almonds, & paneer which uplift the nutrition level of this cuisine. Ingredients

  • Almonds ( Badam Giri)  –  15-20 pcs
  • Raisin ( Munakka)  –  15-20 pcs
  • Boiled Potatoes  –  2
  • Mashed Paneer  –  1/2 bowl
  • Breadcrumbsad crumbs  –  1/2 bowl
  • Chaat Masala  –  1 spoon
  • Kasuri Methi (dried fenugreek leaves)  – 1/2 bowl
  • Salt as per taste
  • Black Pepper as per taste
  • Corn flour  –  3 tbsp
  • Poppy Seeds (Khas Khas)  –  1 bowl
  • Oil or Ghee  to fry

Method

  • Take a bowl & Soak the almonds & raisins for 6-7 hrs. Keep them overnight
  • Now remove the munakka seeds & keep them aside.
  • Also, peel off the almonds.
  • Sprinkle some chaat masala on almonds & put them inside the raisins.
  • Take a bowl, add boiled potatoes, mashed paneer, bread crumbs, chaat masala, salt, black pepper & Kasuri methi in it.
  • Mix them well & divide the mixture into 10 equal parts.
  • After this add stuffed munakka in each part & make the cutlets.
  • Take a bowl & little water in it.
  • Mix corn flour in water & dip the cutlets in it.
  • Now spread the Khas Khas on a plate & roll the cutlets on it.
  • It’s the time to fry these healthy cutlets.
  • Take a nonstick pan, pour some oil or butter in it.
  • Shallow fry the cutlets till they become brown.
  • Garnish them with coriander leaves & serve them with sauce or green chutney.

 3. Baked stuffed Tomatoes

Sharing one of my favourite yummy dish. These stuffed tomatoes are the mix of different coloured vegetables, red tomatoes, green broccoli, peas, onions & some healthy dry fruits (walnuts & raisins). As we all know tomatoes are packed full of nutrients & are rich source of vitamins A and C. Walnuts includes vitamin E, folate, melatonin, omega-3 fats, and antioxidants which increases the memory & boost concentration. Serve this yummy breakfast to your family members full of nutrients. Ingredients

  • Middle size tomatoes  –  5 pcs
  • Cooked rice at least 80%   –  3/4 bowl
  • Finely Chopped Broccoli  –   1/2 bowl
  • Chopped red capsicum  –  1 tbsp
  • Finely chopped french beans  –  1/2 bowl
  • Crushed walnut ( Akhrot)  –  1 tbsp
  • Crushed raisins  –  1 tbsp
  • Pav bhaji Masala  –  1 spoon
  • Salt as per taste
  • Black Pepper as per taste
  • Finely chopped onions  –  1/4 bowl
  • Oil or Butter  –  2-3 tbsp

Method

  • For this yummy & healthy breakfast recipe, firstly Wash the tomatoes & scoop them.
  • Grind the scooped tomatoes & keep the outer covering aside.
  • No take a pan, add some oil or butter in it.
  • Pour the chopped onions & roast them till they become translucent.
  • Mix all the chopped vegetables & saute them well or a minute.
  • Add cooked rice, crushed walnuts & raisins & mix them well.
  • Now add the tomato puree in the stuffing.
  • Take the scooped tomatoes & fill them with this brain-boosting stuffing.
  • Rub some butter on the tomatoes.
  • Baking time – Preheat the oven at 180-degree centigrade.
  • Now bake the tomatoes for 10 min.

4. Fruit & Herb Rice Recipe

Ingredients

  • Rice  –  1 bowl
  • Fresh coconut milk  –  1 bowl
  • Fresh coconut grated finely  –  1/2 bowl
  • Salt as per taste
  • Bay leaves (tej patta)  –  2-4 leaves
  • Boiled beetroot (Chukundar)  –  1 pc
  • Boiled Peas  –  1/2 bowl
  • Finely chopped tomato  –  1/2 bowl

  • Grated carrot  –  1/4 bowl
  • Finely chopped pineapple  –  1/4 bowl
  • Pineapple juice  –  1 tbsp

Method

  • Wash the rice. Soak it in water & sprinkle a pinch of salt in it.
  • Soak it for half hr.
  • Now take a frying pan.
  • Pour some oil or butter in it.
  • Now add tej patta & then pour the coconut oil.
  • Add rice in the coconut oil & stir it well.
  • Cook it for 10-15 min.
  • Now rinse the cooked rice & take out extra liquid from it.
  • Mix grated coconut in rice and leave it for 10 min.
  • Now mix all the other vegetables & fruits.

5. Breakfast Quesadilla

If you are looking for some healthy breakfast, then nothing can be better then this veggie quesadilla. Wheat flour tortilla stuffed with vegetables & cheese raise its level of nutrition.

Ingredients

  • Diced assorted vegetables  –  1 bowl
  • Chopped fresh cilantro leaves  –  1 tbsp
  • Fat-free sour cream  –  2 tbsp
  • No-salt-added salsa  –  1/4 cup
  • Egg whites  –  1/2 cup
  • Freshly ground black pepper  –  1/4 spoon
  • Whole-wheat tortilla  –  1
  • Shredded fat-free mozzarella cheese  –  1 bowl

Method

  • Take a non stick pan. Pour some butter in it.
  • Add the diced vegetables & saute them well for few minutes.
  • Now add egg whites to it & mix it well.
  • Season it with salt & black pepper.
  • Now take a tortilla, spread cheese & fill half side with cooked vegetables.
  • Shred the remaining cheese on the vegetables & fold the tortilla.
  • Now grill it till the cheese melts & it becomes brown.
