1. Veg Manchow soup

Manchow soup is a popular Indo-Chinese food which can be customized to various tastes and flavors. The fresh chopped vegetables and the yummy fried noodles make the primary taste.   • Chopped Carrots  –  1/4 cup
  • Mushrooms chopped  –  1/4 cup
  • Chopped celery  –  1/4 cup
  • Cabbage chopped  –  1/4 cup
  • French Beans  –  1/4 cup
  • Capsicum  –  1/4 cup
  • Green chilies chopped –  1/2 tbsp
  • Red chilies  –  1/2 tbsp
  • Ginger  –  1 spoon
  • Garlic chopped  –  1 spoon
  • Spring onion   –  1/4 cup
  • Oil  –   2 tbsp
  • Vinegar  –  1/2 tbsp
  • Vegetable stock  –   4 cups
  • Red chili sauce  –   1 teaspoon
  • Soy sauce  –   2 tbsp
  • Cornflour  –   3 tbsp
  • Salt to taste
  • Deep fried noodles –  1 bowl


  • Wash all the vegetables & chop them finely.
  • Heat oil in a pan. Add ginger, garlic and chopped red chilies. Saute them for 1 min.
  • Now add onion & cook them till they become translucent.
  • Add chopped mushroom and saute it for 1 min.
  • Mix other finely chopped vegetables & cook them for at least 4-5 min. Reserve some spring onion leaves & capsicum for garnish too.
  • Add soya sauce, salt, black pepper & red chili sauce.
  • Pour vegetable stock & some water & allow it to simmer on slow or medium flame.
  • Add vinegar for some tangy flavor.
  • Mix corn flour in 1 tbsp water & add to the soup to make it slightly thicker.
  • Boil it again for 3-4 min.
  • You can vary the seasoning according to your taste.
  • Take out the soup in serving bowls & garnish with spring onion, capsicum & fried noodles.
  • Healthy vegetarian manchow soup is ready to warm you up.

Note:  For frying noodles, First boil them & then deep fry them.

2. Tangy Tomato Soup

It is also known as Tangy Rasam or spicy tomato soup. It is prepared with the combination of tomatoes and carrot altogether. I personally found this vegetable soup recipe as different from others.   • Fresh red tomatoes  –  5-6
  • Carrot  –  1/2
  • Bay leaf/ tej patta  –  1
  • Black pepper  –  1 teaspoon
  • corn flour  –  3 tbsp
  • Fresh Cream  –  1-2 tbsp
  • Roasted cumin seed powder  –  1/2 teaspoon
  • Salt as per taste
  • Sugar  –  1 teaspoon
  • Onion chopped  –  1/4 bowl
  • Garlic minced  –  1 teaspoon


  • Wash the tomatoes & carrot. Peel the carrot & slice it. Boil the tomatoes & carrot slices in a pressure cooker for 10-15 min.
  • Drain the excess water & add them to the mixer jar.
  • Grind it into a smooth paste. Keep it aside.
  • In a saucepan, heat some oil.
  • Add bay leaf, chopped onion & garlic & saute it for 1 min.
  • Add these cooked onions & garlic to the tomato puree.
  • Grind it again. Strain the soup in a big bowl to extract the outer part of the tomatoes.
  • Simmer the soup on medium flame. Mix salt, black pepper & roasted cumin seed powder.
  • Add corn starch ( Corn flour + 2 tbsp water) to the soup to make it thick.
  • Mix sugar & some fresh cream for the rich creamy taste.
  • Garnish it with some coriander or parsley leaves.
  • Serve this healthy tomato soup with bread croutons.

3. Cream of Mushroom Soup

  • Fresh mushroom  –  3 bowls
  • Olive oil  –  2 teaspoon
  • Celery sticks sliced  –  1/2 bowl
  • Chopped onion  –  1/2 bowl
  • Garlic cloves minced  –  2-3
  • Fresh parsley chopped  –  1/4 bowl
  • Carom leaves (Ajwain)  –  4-5
  • Vegetable stock  –  4 cups
  • Cooking cream  –  3/4 bowl
  • Black pepper  –  1/2 teaspoon
  • Salt as per taste


  • Wash the mushrooms & chop them finely.
  • Heat olive oil in a pan. Add garlic & chopped onions. Saute it till the onions become translucent.
  • Add celery, fresh parsley, carom leaves & sliced mushrooms.
  • Cook it for 4-5 min on low or medium flame.
  • Now take out some mushrooms from the pan & keep them aside.
  • Add vegetable stock & let it simmer for 10-15 min on low flame.
  • Season it with salt & black pepper.
  • Blend it in the mixer into a smooth paste.
  • Pour it into a pan & add cream. Boil it for another 5-7 min.
  • Garnish it with mushrooms , fresh parsley leaves & carom leaves.
  • Pour some olive oil on top.
  • Lip smacking creamy mushroom soup is ready to tickle your taste buds.

4. Pumpkin & Sweet Potato Soup

I personally don’t like pumpkin, but when I had this mouthwatering  soup, I was shocked to know that its pumpkin soup.   • Onion chopped  –  1/2 bowl
  • Olive oil  –  2 tbsp
  • Ginger minced  –  1 teaspoon
  • Pumpkin sliced in large pieces  –  2 bowls (500gm)
  • Sweet potato (shakarkand) sliced in large pieces-  1 bowl
  • Cumin powder  –  1/2 teaspoon
  • Grated coconut  –  2 tbsp
  • Vegetable stock  –  5 cups
  • Salt as per taste
  • Black pepper as per taste
  • Red chili chopped finely  –  1 tbsp
  • Fresh coriander leaves chopped  –  1/3 bowl


  • Heat oil in a saucepan.
  • Add the onions & half ginger. Saute it for 3 min on low flame.
  • Add pumpkin, sweet potato and cumin powder and cook for 2 min.
  • Pour the vegetable stock & boil it on high flame till the pumpkin & sweet potatoes become tender.
  • Keep it aside and let it cool down.
  • Now blend it into a mixer till smooth. Season it with salt & black pepper.
  • In a bowl, mix the coconut, remaining ginger, coriander leaves and black pepper.
  • Before serving this healthy vegetarian soup, garnish it with the coconut mixture.

5. Italian orzo spinach soup

  • Carrots diced  –  1 cup
  • Vegetable stock  –  5 cups
  • Fire-roasted diced tomatoes  –  1 can
  • Onion chopped  –  1/2 bowl
  • celery chopped  –  1/2 bowl
  • Olive oil  –  2 tbsp
  • Garlic cloves minced  –  1 teaspoon
  • Dried thyme  –  1/2 teaspoon
  • Whole wheat orzo pasta  –  1 1/2 bowl
  • Fresh spinach chopped finely  –  3 cups
  • Oregano  –  1/2 teaspoon
  • Salt as per taste
  • Black pepper  –  1/2 teaspoon


  • Heat the oil in a big pan. Add onions and saute it until tender.
  • Now cook celery, carrots & garlic for 2-4 min.
  • Pour vegetable stock & turn the flame on high for 5 min.
  • Add tomatoes, orzo pasta, thyme & oregano and let it simmer for 10 min on low flame.
  • Add the spinach and cook for another 2 -4 min.
  • Sprinkle the salt & black pepper.
  • You can even add lemon juice if needed.
  • Serve this tempting soup hot.
