Dal Baati Recipe – Rajasthan Special Dish

Dal Baati is itself a complete dish and it is very popular in Rajasthan, or you can say Rajasthan special recipe.  It  is a little bit spicy dish. Baati is served with Daal and spicy garlic chutney..

Perfect way to serve  it is to first coarsely mash the Baati then pour pure Ghee on top of it.  Dal Baati is more popular and specially made on some occasions. The Baati usually roast in an open coal fire but you can also cook them under a grill or in your oven.

Learn how to make dal Baati –


For making Baati

  • Wheat Flour –                       400 gm (one small bowl)
  • Semolina –                              100 gm (one small bowl)
  • Ghee –                                       100 gm (5 tablespoon)
  • Cumin seed –                          ½ small spoon
  • Carom seed –                          ½ small spoon
  • Baking Powder –                    ½ small spoon
  • Salt –                                         as per tastedal baati recipe

For making Dal

  • Chana dal (split Bengal gram)                           1/3 cup
  • Toolbar (arhar) dal                                                  1/3 cup
  • Moong dal (split green gram)                            1/3 cup
  • Urad dal (split black lentils)                                1 tbsp
  • Whole Moong (whole green gram)                    1 tbsp
  • chilli powder                                                            3 tsp
  • Turmeric powder (haldi)                                     1/4 tsp
  • Coriander (dhania) powder                                1 tsp
  • Garam masala                                                            1/2 tsp
  • Cloves (laung / lavang)                                       3
  • Bay leaves (tejpatta)                                              2
  • Cumin seeds (jeera)                                              1 tsp
  • Green chilies, slit                                                   2
  • Asafetida (hing)                                                     1 pinch
  • Lemon                                                                       1
  • Ghee                                                                           3 tbsp
  • Salt to taste
  • Tomato –                                                                  2 to 3
  • Ginger –                                                                    2 inch long piecebaati prepration


For making Baati

  • Sift the Flour, Baking Soda and Salt.
  • Add Carom Seeds and mix
  • Add Ghee and incorporate into the Flour.
  • Mix well. Add sufficient water and knead into a stiff dough.
  • Now make medium sized balls from the dough.
  • Flatten the rounds lightly using your thumb to make an indentation in the centre of the baati.
  •  Bake the boiled baatis in a oven at 200°C  for 10 to 15 minutes turning them over occasionally.
  • Burst the baked baatis, dip them in melted ghee and take them out in a plate or bowl.

For making Dal

  • Soak Moong dal, urad dal and Chana dal, arhar daal  in about three cups of water for 20 min.
  • Drain soaking water and add soaked Daals to a pressure cooker.
  • Add 1 tsp Salt, 4 cups Water and pressure cook for 1 whistle.
  • Switch off the stove and do not open the cooker until internal pressure is gone.
  • Grind tomato, green chili and one inch piece of ginger, finely in a grinder.
  • In a bowl, combine the chili powder, turmeric powder, coriander powder, garam masala with 2 tablespoons of water and mix well. Keep aside.dal baati churma
  • Put 1 ½ tablespoon ghee in the frying pan and heat it.
  • Add the cloves, bay leaves, cumin seeds, and asafetida (hing).
  • Mix tomato garlic paste in it.
  • Add add the prepared masala paste and saut for 1 to 2 minutes.
  • Add the cooked dals to this and blend properly.
  • Finish off with juice of lemon and Chopped coriander leaves.rajasthani special food dal baati

Serve baati with daal and garlic chutney.
